Apple Spice Muffins

Ingredients

  • 1 cup white whole wheat flour
  • 1/2 cup BarnDad’s FiberDX
  • 1 1/2 teaspoons baking powder (heaping)
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon (can use more or less)
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup light brown sugar
  • 1/2 cup butter or 1/2 cup margarine, melted
  • 1 1/4 cups unsweetened applesauce
  • 3/4 cups chopped walnuts
  • 1/2 cup finely chopped apples

Optional Spice Topping:

  • 4 tablespoons brown sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg

Directions

    • Preheat oven to 350°F and line muffin tin with paper liners.
    • Mix together dry ingredients.
    • In another bowl whisk together eggs and brown sugar. Once combined add in melted butter or margarine until mixture is creaming.
    • Stir in applesauce.
    • Fold in dry ingredients until just combined and then lightly stir in nus and
      chopped apple.
    • Pour in even portions into muffin tin. Sprinkle with topping (optional).
    • Bake for about 20 minutes or until muffins test done with toothpick.
      Let cool for a few minutes and enjoy!
